In autumn 2015, Mill & Mortar proudly announced their new creation, KARL OTTO. Unfortunately, despite their thorough processing, the supplier turned out not to be able to deliver the quality they wanted and they had to disappoint their loyal customers who had already ordered the product. But now Mill & Mortar has got our hopes up again, and while the supply of rare goods is limited, dare you to take the plunge again. They start with a small Spanish purveyor of organic Karl Johan (aka porcini mushrooms) picked locally. For this purpose, KARL OTTO is only available in a limited edition so far.
The Karl Johan is one of Mill & Mortar's favorite mushrooms because it imparts a wonderful taste of earth, autumn and umami. Ideal for risottos, barley and pearl barley dishes and sauces. The Karl Johan mushroom is the obvious star in this exquisite blend, supported by garlic, crushed parsley and blue cornflower petals.
The flowers are packed in a separate pack that you can sprinkle dry on your finished dish.
Use about 2 tablespoons of KARL OTTO per 100 g of risotto rice. Just a single tablespoon (approx. 10 g) is equivalent to approx. 100 g of fresh Karl Johan mushroom and will add a rich and refined flavor to your dishes.
