What is red pepper?
Red Kampot pepper of this exceptional quality is a small rarity in the pepper world. This special pepper is also known as red-ripened pepper. This is because the pepper berries are allowed to ripen on the stalk until the berry is a dark orange-red color (unlike black and green peppers, which are always harvested green and immature).
The ripe red berries of the Kampot pepper are always handpicked and must be removed one at a time before drying, as there is a fine line between ripeness and overripeness.

Mill & Mortar has selected a red Kampot pepper that is in a class of its own for its flavor qualities and grading.
All of the essential oils in the red, ripe berries are fully developed and you just get an abundance of flavor. Of course, the distinct, enticing spiciness of pepper, but also a sweet aroma and a clear, fruity flavor that is totally unique to this red pepper berry.
While this special processing and grading costs a little more than Mill & Mortar's other pepper varieties, it is invaluable to all of us who love pepper.
What is it best suited for?
Kampot red pepper can be used like black pepper, but is particularly useful in dishes where the fruity sweetness has its place. For example in desserts, sauces with cream or simply freshly ground in dishes.
The world's first pepper brand
The red Kampot pepper is grown in the Kampot region of Cambodia and its origins can be traced back to the Angkor Empire in the 13th century.
Prior to the Cambodian Revolution in the latter half of the 1970s, Cambodia was known for its peppercorn production, which for decades was considered among the best in the world. The areas around Kampot and Koh Kong were known for their pepper production until the late 19th century. Unfortunately, the revolution destroyed production and much of the knowledge that had been built up in pepper farming families over generations.
For many years Mill & Mortar has been pursuing NGO projects aimed at restarting pepper production around Kampot and today production has reached a volume and quality that makes it interesting for Mill & Mortar.

Delivery times
