Sichuan timut pepper
Mill & Mortar's Timur Szechuan is a close relative of the reddish Chinese Szezhuan/Sichuan or the green Japanese Sansho pepper.
The flavor is a fresh citrus with a light strength and is also known as citrus or grapefruit pepper. It conveys the slightly tingling and warm feeling in the mouth that is so typical of this type of pepper. It is used in classic Chinese, Japanese and Nepalese dishes, but is also being used more and more in other cuisines due to its excellent taste properties.
Mill & Mortar have long searched for a version of Szechuan Pepper that meets your needs and are thrilled that they have finally found it. And it's a long and winding road, all the way from Nepal. Here the Szechuan Timut pepper grows on thorny bushes at an altitude of more than 2000 meters in pristine Hi-Malaya.
The prickly trees can grow up to 10 meters high. The small capsules open when ripe. The pepper is harvested by hand by the mountain farmers and transported down the mountain on small paths, where the berries are cleaned, dried and sorted by hand. As with most other spices, grading is extremely important with this pepper and there are three grading methods: the first removes stems and other parts of the plant, the second separates the seed pods from the small black kernels inside, and the third becomes the most ripe Grains selected based on their color. The capsules are brown with a light interior; the Chinese variety is redder in colour, while the Japanese variety is typically green. Sichuan pepper can be lightly crushed in a mortar or chopped before use.
Timur Szechuan is, of course, an obvious choice in Chinese cooking, and goes very well in marinades or crusts for meat, mixed with other spices and herbs, fresh or dried. Szechuan pepper also comes into its own in chutneys, pickled or fermented vegetables.
