If you like eating raspberries you have picked yourself, then the Prince Himbeerla will delight you. Because for the 34% raspberry schnapps, Prinz uses handpicked raspberries from the best growing areas. The red berries get the perfect amount of sun in forest clearings and on forest edges to ripen into juicy aromatic fruits. Thanks to their decades of experience, they know where the finest raspberries grow, which are best suited for making their raspberry schnapps.
Their fruit experts at Obsthof Leiblachtal on Lake Constance check the sensitive fruit with the utmost care. Appearance, feel, smell, taste, sugar-fruit acid ratio and other quality criteria must be right so that only ripe, healthy raspberries are processed.
They wash the hand-picked berries immediately and process them using Prinz's own method. This combines 130 years of experience in traditional fruit processing with modern technology: the fragrant raspberries are pureed in a special machine and passed through a fine sieve. In this way, they remove the small, bitter raspberry seeds and only use the aromatic pulp. They then mix the raspberry puree with alcohol to extract the flavors typical of the variety. The fruity, intensely fragrant alcohol approach is called raspberry macerate.
GENTLY FIRED FOR YOU AND IDEALLY STORED
Prinz burns the macerate in the classic raw and fine distillate process and obtains a distillate that contains the full character of the raspberry. Their art of distilling, four generations of experience and modern technology are required. To do this, they use the state-of-the-art vacuum process, which allows them to distill at a temperature that is 30 °C lower and thus preserve the aroma. In this way they also preserve the heat-sensitive aroma components of the raspberry distillate, the basis for the full, varietal taste of its raspberry. Conventional stills are not able to do this because they have to fire at at least 78.4 °C.
Now the time to wait begins: In order to develop the raspberry aroma, they store the distillate for two to three years in large stoneware containers in their 130-year-old distillery cellar. The temperatures there are stable and cool, which means they are ideal for storage. Only then can you reduce the raspberry distillate with the purest spring water to a drinking strength of 34% vol and fill your popular raspberry glass.
HIMBEERLA OFFERS YOU THE FULL TASTE OF RASPBERRY
The fine aroma of the delicate raspberry unfolds particularly well in the bulbous schnapps goblet. The best thing to do is try it yourself: the schnapps spoils your nose with an intense berry scent, like a handful of freshly picked, juicy raspberries. On the palate it convinces with the pronounced taste of the sweet berries typical of the variety and a soft finish.
