The Williams-Christ is definitely one of the most popular types of pears, not only when it comes to eating, but also to distilling schnapps. Their incomparable taste is clearly distinguishable from other varieties, even for inexperienced schnapps connoisseurs. Paired with a fine oak barrel note, a very special specialty is created: the old Williams Christmas pear.
GOLDEN YELLOW FRUITS WITH AN INTENSE SCENT
Only sun-kissed fruits of the best quality, which have ripened under optimal climatic conditions in the gardens of the Prinz fruit growers, are used to produce the fine Williams distillate. The harvest usually begins in August and September. At the fruit farm, Prinz checks the ripeness of the freshly delivered fruit. The white flesh should be tender but not floury. Cored and stemmed, they mash the pears and let the whole thing ferment.
DEMANDING MANUFACTURE
A feeling or rather a fine nose for the right timing of the individual processing steps is very important with the Williams pear. Even small mistakes affect the subsequent taste result. The firing process therefore also requires special skill and a great deal of experience. The master distillers at Prinz ensure that the fine, multi-layered aromas of the fruit are transferred gently into the distillate – the starting product of their Alter Willi – using the raw and fine distillate process.
THE WILLIAMS BARREL SMOOTH AND FLAVORED WITH BARREL CHARACTER
After storage in earthenware, the fine schnapps is placed in wooden barrels for several months, whereby the type of wood used is decisive for the taste. This is the only way the Alte Williams-Christbirne gets the typical barrel character without overpowering the fruity aromas. And they can already be found in the nose - multi-layered, intense and characteristic. The impressions continue on the palate and on the finish. The full-bodied, yet soft taste of the fruit paired with a subtle sweetness and the pleasant tart-spicy notes. A real pleasure experience!
Drinking recommendation: Enjoy the Old Williams Christmas pear as a digestif, in between, alone or in a relaxed atmosphere - just as you like. The fruity aromas unfold particularly well in the schnapps goblet with a stem at a temperature of between 17 and 21 °C. Did "Alter Willi" convince you?
