With a good filleting knife, you can fillet the fish with great precision. The forged fish filleting knife has a thin and flexible blade, ensuring good control and allowing you to fillet the fish wafer-thinly without creating bones or losing too much meat. All Forged knives are forged by hand, making each one unique. The Forged Olive fish filleting knife is made of 12cr27 steel with a hardness of 60 Rockwell, has a blade thickness of 1-2 mm, a blade length of 18 cm, and an olive wood handle, which means the knife is not dishwasher-safe. Packaged in a luxury wooden box and comes with a 10-year warranty.

Each knife is forged by hand from Japanese steel in a workshop where everything exudes passion for the craft: the heat, the smell, and the orange glow of the fire, the hissing sound as the metal cools. You can literally see the blacksmith's hammering on the blade. And every time you use and sharpen the knife, it gains even more personality. That's what makes your knife unique.
