Black garlic has been cultivated for centuries and has a complex umami flavor.
Black garlic is becoming more and more popular because it has special flavor properties that are well suited to our plant-based cuisine.
What is black garlic?
The key ingredients to making black garlic are time, heat, and moisture. Black garlic is made from fatty garlic cloves or whole garlic heads that are ripened at 60-70 degrees Celsius in high humidity for 45-60 days. During this ripening process, the garlic head undergoes a Maillard reaction in which heat and humidity lead to changes in the garlic's amino acid and sugar content. This changes the colour, consistency and taste. It turns black and the consistency becomes soft and a little sticky. The strong smell and taste disappear and are replaced by a deep umami; soft, acidic and with notes of balsamic vinegar and anise.
Black garlic as a dried spice
The black garlic has been further dried and granulated for you to work with as a spice. The dried garlic replaces the soft version in a ratio of 1:3 and has a significantly longer shelf life.
Black garlic is said to be originally from Korea, where it has been used for centuries for flavoring and in traditional medicine. Today it is widespread in Asia and Europe, where its umami flavor is appreciated in the kitchen. This black garlic is organically grown and ripened in the Cordoba region of Spain.
How do you use black garlic?
Black garlic can be stirred directly into sauces, quiches, soups and marinades, or mayonnaise and dips, where its dark and sweet flavor comes into its own. If you know Yotam Ottolenghi's taste universe and amazing recipes/cookbooks, then you know that black garlic is a must have.
