Our nutmeg is wrapped in the shell, these are the natural preservatives. What is fascinating is that the nutmeg tree provides two spices - nutmeg and mace. The fruit of this tree is not a fruit in the traditional sense of the word, but an onion with the nutmeg core. Outside is a thick protective cover that opens as the nuts ripen. It is a fascinating sight when the shell breaks and the red flower and dark nut inside are revealed.
Nutmeg is a popular spice used in stews and sauces, perhaps best known for its use in béchamel sauce for lasagne. However, mace is less commonly used - whole in stews, marinades, broths, and in powdered form in quatre-epices, croquettes and sausages. The flavor is slightly less strong than the nut and has a slightly sweet undertone, making it an ideal condiment for cakes and other desserts.
Nutmeg and mace are essential in garam masala, a classic Indian spice blend. The M&M nutmeg and mace come from the village cooperative in Pilimathalawa and the nuts are included in the shell to preserve flavor and aroma. The mace is whole and slightly orange-red.
Nutmeg: Cut the nuts into small pieces or grate them directly into the pan. Mace: Use whole or tear into small pieces.
A mortar or coffee grinder can be used to pulverize the nutmeg.
