Der Cuvée Rosé zeugt von einem faszinierenden handwerklichen Können, er lässt die Fruchtnoten geradezu explodieren. Mit Finesse und Eleganz entfalten sich die perfekt erhaltenen Aromen des Pinot Noir, das Herzstück einer Assemblage, die auf maximale Reintönigkeit setzt und für die nur der Most der ersten Pressung verwendet wird. Die Pinot-Trauben aus Les Riceys verleihen dem Ganzen eine gute Struktur. Der Chardonnay aus Chouilly lässt den Pinot erst so richtig zur Geltung kommen und verleiht der Komposition unvergleichliche Frische.
Nicht nur zu Erdbeeren und roten Früchtesorbets, begleitet der Rosé auch mühelos Krustentiere, Geflügel und Terrinen. Er ist fruchtig und leicht und passt hervorragend als Aperitif. Der Rosé besteht zu 25% aus Pinot Noir der besten Lagen von Ricey, zu 25% Pinot Meunier aus Leuvrigny, einer der besten Lagen für Meunier und zu 50% aus Chardonnay der Grand Cru Lagen Chouillys. Der Pinot Noir wird zu Rotwein verarbeitet und dann der Cuvée beigegeben. Der Champagner duftet nach roten Beeren mit Anklängen von Kakao und frischen Citrusfrüchten.
